Guarda wine. 100% PARALLADA MONTONEGA: It is a native variety of the Pla de Manlleu, a town in the Penedès region at an altitude of 500 meters that provides a cool microclimate just 5 km from the Mediterranean. Which, together with the variety and a low PH of 3.1, gives us incredible acidity! We always put it on the market with 3 years in the bottle, so that it has time to develop the tertiary aromas above those of the grape. Variety widely used for cava cupages, due to its high acidity and low alcohol content. To achieve quality we carry out late harvests at the end of September or the beginning of October, and we only collect the very ripe grapes so that they have a good final structure. Surprising and complex nose, which increases with the years in the bottle and has a central nerve in the mouth that gives it a great journey and persistence. Light, complex, fresh ... surprising! There are very few wines on the market that are 100% Parallada Montonega ... a total wine lover  ;-)
