WEINGUT AM KAISERBAUM

We, “Weingut am Kaiserbaum ~ Hammel-Hundinger” are a family-winery in the northern part of the region of „Pfalz“. A part of the buildings, such as a vaulted cellar date from the 17th century. In 1980, the Kaiserbaum tree, planted in the year of Gerald’s birth, became the center of our winery. A legend says, that it is getting a symbol for luck and peace, when the bird “Phoenix” comes to rest on it. So we decided to perpetuate this magnificient tree, together with “Phoenix”, on our labels. The design is created by Silvia, Gerald’s sister – and it gives structure to our wine collection by the first view. The violet color of the Kaiserbaum flowers inspired us to choose this color for our bottle labels. 
The wine-growing work follows the principles of controlled environment-friendly practices.
For us it means that the avoiding of insecticides and herbicides, the gentle soil-working, the use of compost, the greening of the rows lead to a healthy soil structure and the tastefulness of the grapes. Besides this, we are engaged and a certified partner in the program “partnership nature protection”. Since 2006, Frithjof’s existing treasure of experiences is expanded by Gerald’s know-how and feeling for wine, which he won during numerous education locations. After the apprenticeship in Palatinate, with internships in Burgundy and Wachau, he studied enology in Geisenheim and Bordeaux.

Our around 25 ha of vineyards reach from the village of Gerolsheim over Laumersheim, Weisenheim am Sand, Freinsheim to Herxheim am Berg. The multiple different soil types and microclimats guarantee perfect ripening conditions for our grape varieties.
Red wines are traditionally matured in oak barrels, to reach storable wines. Ripeness and structure decide about the use of new small barriques or neutral big barrels. The white wines are reductively fermented in stainless steel and are allowed to develop long on the lees.
