• Origin / Home: Germany / Baden / Markgräflerland/ Betberg • Philosophy: winemaking with respect to the principles and needs of the nature is our passion • History: family owned vineyards and winery for generations. since 2005 our vineyards are cultivated with the principles of organic viticulture, controlled under the federal association ECOVIN. since 2010 we go one step further: we work under the biodynamic guidelines, certified by Demeter. • Vineyard / Sites / Soiltypes/ Varieties: organic / biodynamic cultivated vineyards of about 15 hectars. training system : vertical shoot position, 5000 vines/hectar. soiltype: fertile Loess, Loam, partially calcareous and stony, especially the site called “Steinig” (german for stony) where we cultivate Pinot Noir and Chasselas. Chasselas (Gutedel), Weißer Burgunder (Pinot Blanc), Grauer Burgunder (Pinot Gris), Spätburgunder (Pinot Noir) and Chardonnay are our main varieties Winemaking: • Healthy, fully ripe-tasting grapes, handpicking and selecting in the vineyard • Partially coldsoak, matched pressing-duration, settling, temperature controlled fermentation with indigenous yeast. Maturation on the lees with Bâttonage, late sulfuring with as less as possible. One Filtration with Kieselgur before bottling
