Cleyey loess soil on a base of red sandstone
Hand picked with gentle berry grading in the cold morning of September 14, 2019 in the light of a full moon.
Whole berries are pressed gently over a long period of time with little pressure. Fermented spontaneously in INOX at 15 - 18°C.
2. Spontaneous malolactic fermentation.
Unfinned, unfiltered, without sulfites
A prime example of soil consistency and vividness. The 2019 FULL MOON Chasselas glows with soft yellow green reflexes in your glass.
On the nose we have juicy-fruity notes of galia melon, apple blossom, some pear and a hint of grapefruit. On the palate the unfiltered Chasselas shows its aromatic vitality. Complex herbal notes with an extraordinary length! This wine combines the best attributes of the grape with the energy of the sun and the expressiveness of the terroir.
