My name is Fizzy for my naturally sparkling character, lively and spirited!
My grapes are 100% Passerina, a Marche native vine characterized by a large aromatic framework and by a high level of acidity that makes it particularly suitable to be converted into sparkling wine. I am a very chilled sparkling wine, light-bodied but with good personality, fine and persistent. My colour is bright straw yellow, I release an intense fragrance of flowers and fresh fruit. To the taste I appear mild but heady, with a natural and refreshing flavor that every sip makes you want to drink again. My winemaking process: white vinification with controlled temperature of 16 ° C. Froth capture in autoclaves (Charmat or Martinotti method) for 45-50 days. Aging in bottle for 3 months. I perfectly match with aperitifs, appetizers, light fish dishes, raw vegetables and raw fish, Ascolana olives and ham.
