White elaborated of old, sloped vineyards, (Costers) of the same estate, in this moment in conversion to organic agriculture. Fermented in new barrels of French oak at a controlled temperature between 16 and 18 degrees celcius.
Following the initial robust stage of fermentation, the wine is racked with fine lees only and aged for 3 months in the new barrels with batonnage to obtain a maximum level of aromas and fruit flavours.
Stabilization is completed in January with the natural cold of winter.
The Pedro Ximenez is an unusual grape in Priorat with only 18.000 kg harvested in the entire Priorat Apellation. We at Genium produce around 2.000 kg. Each of our vines produces only about 500 grams of grapes.
