From our vineyards in Sovana; this riserva wine is produced only in very favorable years and it still in a study phase: our aim is to take advantage of the important tannic structure of Teroldego and of the elegance and smoothness of Ciliegiolo.
The vineyards have been planted from 1998 to 2003 and are trained as guyot, with a density of 4500 plants per hectar. The grapes are hand picked and each variety is vinified separately.
The fermentation takes place without the addiction of yeasts and lasts, including maceration, 25 to 30 days. The wine is matured in second passage wood for approximately 18-30 months.
Dark red ruby, very consistent. The nose is deep: black raspberry, cider wood, black pepper blend in the bouquet. In the mouth it is warm and concentrated, with tannins still very present: very long.
