MYTHOS white - Pet Nat

Clayey loess soil on a base of red sandstone
in a cool slope

Yield : 40 hl/ha

Harvest : Hand picked with gentle berry grading 
on fruit days of the moon calendar with cool 

Vinification: 12 hours maceration after feet stomping in open tubs, spontaneous fermentation in INOX at 15-18°C with 2% whole berries, spontaneous  2. Malolactic fermentation, unfinned, unfiltered (yeast clouded)

Maturation: Inox and Bottle

Honey yellow color with a tingling Mousseux. In the nose we have amazing aromas of ripe maracuja, stewed quinces, caramelized pineapple, walnut and green tea. A thousand aromas are dancing in your nose. Extremely aromatic and expressive on the palate with an almost oily-eatheral texture. We have notes of cardamon, forest honey, green paprika and brioch. The dynamic play of sweetness and acidity is consistently juicy and is accompanied by herbal spices and a wild aromatic minerality
