"Campotorbian" Ripasso 2017
Well bodied wine, its garnet colour acquires full ruby reflections; the scent is slightly spiced with notes of ripe fresh fruit, the taste is harmonic, dry and velvety.
It is produced using the double fermentation method: the first one with a blend of Corvina, Rondinella, Corvinone and Oseleta grapes and the second one takes place on Amarone skins with the addition of 10% of raisins, so it acquires its typical scents, its main features and a higher alcoholic degree. The maturation takes place in tonneaux, in wooden barrels for 24 months and in bottle for 6 months.
Thanks to its body this wine stands longer ageing than ten years without any problem.
Pairings: it perfectly matches with grilled meats, game and roasted meat. Goes hand in hand with platters of cold cuts and fresh cheese with mustards.
Recommended service: uncork it at least 1 hour in advance, serve at 18°-20°C
