The grapes are hand-picked and placed in small boxes containing approximately 16 kg of grape.
The grapes are immediately transferred to the winery passing trough a destemming machine, then they are gently pressed and transferred into stainless steel tanks where the maceration and the fermantation take place. The temperature is controlled and never exceeds 28 °C.
As soon as the wine is drawn off, 10 % is transferred into french oak barrels for an a ageing period in order for malolactic fermentation to take place, the balance of the wine will be malolactic fermentated in tanks.
After the maturation period the wine is blended and prepared for bottling.
The merlot is aged for 6 mounths in the bottles.
