Fermentazione in cemento per 8-10 giorni senza  temperatura controllata con lieviti indigeni. Segue affinamento in acciaio per 3-4 mesi. Viene imbottigliato senza essere filtrato, dove rimane per 2 mesi. Può presentare deposito.
