DISIDRATHING 	Hand-picked into crates of 5 kg.  Dried for 1 week in the sun on racks and then for about four months, hanging bunches in a ventilated, shady place without forced ventilation. 
VINIFICATION 	soft pressing in press, vinification in white without maceration on the skins in stainless steel vats at controlled temperature below 18 degrees. 
AGING 	IN SMALL OAK barrels FOR ABOUT 1 YEAR AND THEN IN BOTTLES FOR ABOUT 3 YEARS 	
CHARACTERISTICS 	Light Red Color with shades Orange, Delicated Perfumes of red fruits with predominance of Cherries and notes of Vanille with citrus spicy, Incredible complexity and aromas. Good acidity with long persistence in mouth. Perfect density and oiliness 
TEMPERATURE 	serve at about 10/12 degrees. 
BEST SERVED WITH Seasoned Cheeses, Cream dessert, dark and milk chocolates, Oven cakes.
