CLOSURE: wooden cork

Dark flaky marl and limestone from Lias.

Carbonic maceration is practiced on the Carignan noir while the Syrah follows a more classic vinification with destemming. The vatting lasts three weeks. After blending, the alcoholic fermentation ends in French oak barrels. Aging lasts twelve months.

Boar stew, grilled lamb ribs.

Marnes sombres feuilletées et calcaires du Lias.

La macération carbonique est pratiquée sur le carignan noir tandis que la syrah connaît une vinification plus classique avec égrappage. La cuvaison dure trois semaines. Après l'assemblage, la fermentation alcoolique se termine en fût de chêne français. L'élevage dure douze mois.
