Cabernet Sauvignon 100% from our highest vineyard facing north east, dominating the plains (great view up to Bologna city center). Accurate pruning and shoots selection. Grapes are selected and hand picked in early October, in small plastic crates.
During fermentation with its own natural yeast, it goes through a few hand batonage. The maceration in its skins lasts 25 days. After malolactic fermentation, 50% of wine has been aged in used French woods barriques from different forests of Allier and Troncais for 12-16 months, other 50% in Slavonia oak for 10 months; and then in bottle for more months.
