In its ongoing search for the perfect Grenache, in 2007, Bodegas Canopy launched Kaos, an elegant, limited-production wine that expresses the full potential of high-altitude Grenache like no other.
After many years spent recovering old vineyards at high altitudes, the Canopy hit pay dirt in Cebreros. Nestled in the valley of Alberche, amidst the snowy peaks of Gredos and Guadarrama, the Cebreros vineyard is characterized by its dizzying, almost ravine-like slopes, where old vines over 76 years old spread their roots through the wild, rugged slate soil. These conditions, together with the utmost respect for the land and the limited production of the old vines, distill the essence of the fruit into the bottle, resulting in a wine with a unique personality, which ages in 500-liter barrels for eighteen months.With a deep intensity, its bright red color is reminiscent of ripe cherries.
