Manual grape harvest in boxes, immediate destemming, fermentation in contact with the grape skins for 4 days, with frequent pumping over at controlled temperature. Vinified and stored in stainless steel barrels.
Pairings: cold cuts, cheeses, mixed boiled meats, roasts, pork, pork ribs, stews, game.
Serving temperature: 15 ° - 16 ° (cooler in summer)
