PERIOD AND METHOD OF THE HARVEST: middle of September, hand harvest

Hand harvest in small boxes maximum weight 15 Kg. The grapes are pressed directly without crusching and destemming, so we obtain a free run juice green and brillant that ferment just in iron steel tanks for about two weeks at 16°C.
The wine stays about five months in iron steel tanks with weekly stirring to move fine lees and is filtrated before bottling.
