Obtained from the second pressing (2nd flower) of the grapes used for the production by the traditional method. After cooling the grapes, it gets de-stemmed and pressed so that it could start natural fermentation at a controlled temperature to extract flavors and aromas. This will be followed by several battonage on the noble lees, then bottled in the 2nd decade of March with its yeasts and sugars left over from the first fermentation.
