Description
That referments in the bottle according to the Pet Nat method. Not dégorgement, it contains the natural sediment of its own yeasts on which it is aged.

From our certified organic grapes, 80% Chardonnay  - 20% Pinot Nero  cultivated on the land of Basso Frignano (Modena) at the altitude  of 450 mt a.s.l. 

Vinification:

Obtained from the second pressing (2nd flower) of the grapes used for the production by the traditional method. After cooling the grapes, it gets de-stemmed and pressed so that it could start natural fermentation at a controlled temperature to extract flavors and aromas. This will be followed by several battonage on the noble lees, then bottled in the 2nd decade of March with its yeasts and sugars left over from the first fermentation.

Characteristics:

It is of a yellow color with greenish reflections,
turbid with a dense and regenerating foam.
The nose feels aromas of crunchy fresh fruit and
citrus fruits. Floral and herbaceous notes are
perceived.
