Très Bien is a blend of Trebbiano Romagnolo and Chenin Blanc. Trebbiano stays with his skins for 5 days. Chenin Blanc follows a more strict ‘white wine progression path’ and is separated from the skin after crushing and destemming. Blend’s percentage, change year over year following the taste and the mood of the winemaker.
