TERRE DI PERSETO

Our Winery & Farm “Terre di Perseto” is placed on the sweet Chianti Classico hills, between the cozy villages of San Casciano Val di Pesa and Greve in Chianti, in one of the most well-known areas for the production of Chianti Classico wines.  Our winery & farm was founded by Metello Sabatini on 1958 and is today led by his grandchildren Niccolò and Daniel Martelli, who, with passion and dedication, are continuing the family traditions, producing wines with grapes coming exclusively from their own vineyards.  
Terre di Perseto's vineyards cover 25 hectares and are ideally located as for sun exposure and soil quality (limestone/Alberese type). They are placed at an altitude of 250-300 meters above sea level, facing South-West. The grapes we grow are: Sangiovese, Merlot, Cabernet Sauvignon, Canaiolo, Syrah, Montepulciano and Trebbiano.
On 2010, Niccolò and Daniel Martelli undertook a total renovation of the vineyards and cellar, in order to innovating the production processes through the adoption of integrated agricultural technologies and techniques. Harvests are exclusively carried out by hand to allow a careful grapes' selection. 
The winemaking processes are carried out according to the traditions of the Chianti Classico area, respecting all the rules laid down by the corresponding production disciplinary, which establishes the requirements necessary for a wine to bear the denomination "D.O.C.G. Chianti Classico" (Chianti Classico’s Denomination of Controlled & Guaranteed Origin). 
All the wines are vinified in stainless steel vats and then refined and aged in steel or oak barrels, according to the type of wine wished to produce.
Our wines express the history of a traditional craftsmanship and family work and are characterized by elegance, complexity, aromatic richness and extreme pleasantness on the palate. 
We produce a refined selection of DOCG products (with a Denomination of Controlled & Guaranteed Origin), including Chianti Classico DOCG wine, Chianti Classico DOCG Riserva, as well as Red, White and Rosé of Tuscany IGT wines (with Typical Geographic Indication), extra-virgin olive-oil and DOP Chianti Classico extra-virgin olive-oil (“DOP” Extra-Virgin Olive-Oil means it has a Designation of Protected Origin, which applies only to productions where the entire production cycle, from the raw material to the finished product, is carried out within a well-defined geographical area and therefore cannot be produced outside of it), Vin Santo dessert wine and Grappas made from Chianti Classico grapes. Some years ago we started to grow berries (blackberries, raspberries, blueberries, tayberries, strawberries) for the production of jams and fruit-based liqueurs.
It is also possible to book wine & olive-oil tastings at our farm.
