Edoardo I is a sparkling wine made with the charmat method. The Chardonnay and Pinot Noir grown at around 400 meters above sea level enjoy the fresh air at that altitude, that brings a slow maturation. This climate condition together with the limestone soil makes the acidity comes out. It is a wine generally drank for apertifs and starters. I decide to give to the wine the name of my son, a boy sparkling and elegant like this wine.
