Selezione e pressatura soffice in saturazione di azoto a bassa temperatura.
Prima della fermentazione, il mosto viene decantato. Terminata la
fermentazione le fecce nobili saranno preservate eseguendo settimanalmente
dei batonnage e conservate per 8 mesi.
