The vinification in purity of the Trebbiano Toscano, brings out and expresses the personality of this wine. With moderate acidity, it shows fresh and fruity, with aromatic herbaceous notes and a fine minerality in the background. Extremely versatile in its combinations, a fluid and undemanding drink allows it to be easily combined with appetizers, first courses and fish dishes, in simple and delicate preparations. The presence of light sediment of noble lees, due to the absence of filtering and clarification, is further indication of the naturalness of the product.

Immediate destemming and 2 days maceration on the skins, then manual pressing and immediately in the barrel for spontaneous fermentation, for several months. At cellar temperature and without added yeasts, subsequent refinement in the bottle.
