Description

Salix is a wine produced from a very ancient vine, the Colorino del Valdarno, once very present in Tuscany, but now almost disappeared due to its very poor yield.The small and scattered bunches of the vine give origin to a very particular and well recognizable product, with a strong wild and rebellious soul that more than any other wine brings with it the true archaic identity of Tuscan wine. The name "Salix" wants to be a tribute to the Willow, once very used in viticulture. The grapes, harvested by hand at the beginning of October after a very light pressing, are placed in old brick barrels for a short maceration. Fermentation takes place on their own yeasts and tannins in tonneaux.
Tasting Notes: Well recognizable to the nose for the intensity and the peculiarity of red fruit mixed with black pepper, Salix offers in the mouth an excellent and unique balance in tannins and acidity with a long, warm and persistent finish. Very suitable for red meats .
