MAIN CHARACTERISTICS:
Our Sauvignon grows facing north, this particular gives the wine an indisputable freshness. At the sight it is immediately brilliant, with a straw yellow color and green reflections, when we bring the glass to the nose we are transported to an Italian garden, and we immediately begin to perceive hints of gooseberry, sage, thyme and boxwood flowers. Tasting it you immediately appreciate its elegance, depth and persistence. And it is precisely its freshness that makes it an excellent accompaniment to dishes with crustaceans or raw fish, but also with vegetarian dishes or fresh cheeses.
WINE-MAKING & BOTTLING:
The grapes are made into white wine through de-stemming and immediate pressing. Alcoholic fermentation at a controlled temperature. Matured in steel. Followed by bottling and ageing in the bottle for 5 months at the end of spring.
